Here's how to make this festive soup (makes 4 servings ) . 2 tbsp coconut oil 1 medium onion 1 garlic clove 2 pounds butternut squash 1-32 ounce pack veg broth 1 tbsp pumpkin spice . Chop the ingredients. Melt the oil. Sauté the onion and garlic for a few minutes. Add squash, veg broth and pumpkin spice. Simmer 20 minutes. Transfer to blender. Blend and eat. Top with homemade croutons and your favorite herbs. There you go.
