🍲SOUP SEASON🍲 is among us you guys! Curl up with a bowl of this yummy autumn squash recipe and hand a soup-filled squeeze to your little love for a mess-free fall staple! ❤️🍲❤️🍲❤️🍲❤️🍲❤️🍲❤️INGREDIENTS ❤️🍲❤️🍲❤️🍲❤️🍲❤️🍲❤️ 4 cups of peeled and cubed butternut squash, roasted 1 large apple, peeled, cored and cubed (I used a Honeycrisp. If you want your soup less sweet, you may want to use a Granny Smith. ) ½ of a large yellow onion, diced 1 tbsp. coconut oil ½ to 1 teaspoon curry powder *I actually used 2 teaspoons of curry and loved the way the soup turned out, but I've had several readers comment that the curry was a little too strong. You may want to start with ½ teaspoon and add more to desired taste. 3.5 cups vegetable broth ½ cup almond milk (I used unsweetened vanilla almond milk. ) 1 tsp salt + a few extra dashes a few dashes of cinnamon ❤️🍲❤️🍲❤️🍲❤️🍲❤️🍲INSTRUCTIONS ❤️🍲❤️🍲❤️🍲❤️🍲❤️🍲Roast cubed butternut squash that has been seasoned with cinnamon and salt for 30 mins at 425 degrees F. Meanwhile, in a large skillet over med-high heat, sauté apple and onion in coconut oil with curry powder and a few dashes of salt for about 10 mins and until softened. Add broth, milk, and squash to the large skillet with the apple and onion and bring to a boil. Reduce heat and simmer uncovered for about 20 mins. Stir in salt to taste. I used 1 tsp of salt. Use an immersion blender or transfer soup to a high-speed blender or food processor and blend until soup is smooth and creamy. Enjoy with crusty bread or a grilled cheese! Today we are making a Healthy Fall Minestrone Soup! This soup is so hardy I usually don't add the pasta but definitely taste great with it! Happy Saturday Everyone! Autumn Minestrone Soup Yield: About 6 servings Ingredients 2 medium carrots, diced 1 medium yellow onion, chopped 1 Tbsp olive oil 3 cloves garlic, minced 6 cups vegetable broth 2 1/2 cups 3/4-inch diced yukon gold potatoes 2 1/2 cups 3/4-inch diced butternut squash (I bought it pre-cut ) 1 medium zucchini, ends trimmed, sliced into half moons or quarters 1 (14.5 oz ) can diced tomatoes 2 1/2 tsp finely minced fresh rosemary or oregano (or 1 tsp dried ) 2 1/2 tsp minced fresh thyme (or 1 tsp dried ) 2 bay leaves Salt and freshly ground black pepper 2/3 cup dry ditalini pasta (optional ) 2 cups packed chopped kale (thick ribs removed ) 1 (14.5 oz ) can red or white kidney beans, drained and rinsed Shredded parmesan cheese, for serving (optional ) Directions Heat olive oil in a large pot over medium-high heat. Add onions and carrots and saute 3 minutes then add garlic and saute 1 minute longer. Stir in vegetable broth, potatoes, squash, zucchini, tomatoes, rosemary, thyme, bay leaves and season with salt and pepper to taste. Bring to a boil then and stir in pasta if using. Cover, reduce heat to medium low and and simmer until veggies are nearly tender, about 15 minutes. Stir in kale and kidney beans and cook until kale is tender, about 5 minutes longer. Tomorrow I will be making one of my favorite soups! What makes it so good is the roasted flavor ! I'm roasting chickpeas and eggplant tossed in garlic, olive oil Himalayan pink salt and fresh ground pepper. Do this before hand makes such a difference in taste! It gives it that rich savory flavor ! A perfect cold weather comfort food!
